“Busy Day” Cake

Who says homemade has to be hard?


Need an easy and quick cake? This recipe is for you! With just 7 ingredients and a 30 minute bake time, you can have cake in less than an hour. Even a novice baker can’t miss with this cake.


What I love about this recipe is that it is very versatile. The original recipe calls for vanilla extract, but for my version I used lemon. You could also use almond extract or even add chocolate chips. There are so many ways to use this recipe!

Busy Day Cake

1 and 1/2 cups all-purpose flour
2/3 cup sugar
2 teaspoons baking powder
2/3 cup milk
1/4 cup butter, softened
1 egg
1 teaspoon vanilla, or other flavored extract

1)Preheat oven to 350*F.
2)Grease and flour an 8-inch cake pan
3)In a medium bowl, combine flour sugar and baking powder.
4)Add milk, butter, egg, and vanilla.
5)Beat with an electric or stand mixer for 1 minute. Spread into cake pan.
6)Bake for 30 minutes. Use wooden toothpick to test if cake is done.
7)Cool in pan 10 minutes. Then remove from pan and continue to cool 30 minutes.
